Coffee growing is a very labour-intensive operation and it provides important trading income for many nations and people throughout the world. The most famous story about the origin of coffee is the story of Kaldi a goat herder from Ethiopia. It is said he noticed that his goats became very active after eating the red berries of a certain plant. He tried a few himself and noticed the stimulating effect of the berries. It is then said that monks started drinking a beverage made from the berries to help stay awake for the prayers; this would have been around 1000 AD. Over the next few hundred years the Arab world started to use the berries as a beverage and coffee was born. In those early years, coffee was mostly confined to the Muslim world with the export of coffee plants and seeds banned. But coffee could not be hidden forever so eventually coffee was introduced to Constantinople and coffee houses were opened in 1475. European traders then brought coffee back to Europe by approximately 1600. At first, coffee was met with a hostile reaction, with some Christians calling it the ‘Devil’s Drink’ and asking Pope Vincent III to ban the beverage. He tried coffee and liked it so much that he is claimed to have said “This beverage is so delicious that it would be a sin to let only misbelievers drink it! Let’s defeat Satan by blessing this beverage, which contains nothing objectionable to a Christian!” Coffee shops sprung up in every city and became an important social and networking place to meet. This tradition continues today with the French word for coffee being ‘Café’. Coffee is said to have changed the social fabric of society by providing a popular non-alcoholic alternative to beer and wine. For the first time in recorded history people were not drunk all the time. Coffee today is grown and enjoyed worldwide and is one of the few crops that small farmers in third-world countries can profitably export. The coffee plant is a tree that is pruned to grow to a height of approximately three metres. This makes cultivating the beans easier as most of the beans are handpicked. The plant has white flowers similar to jasmine that grow in clusters and set to become red cherry-like fruit; beneath the red skin are two pips which are the coffee beans. Because the berries ripen at varying times the fruit must be handpicked to select only those beans ripe for harvest. This requires the picker to pick from the same plant many times and is very labour intensive. This is why coffee is grown in developing countries where labour is cheaper and foreign income is needed. Coffee plants grow best in a mountain tropical climate between the Tropic of Capricorn and the Tropic of Cancer. This mountainous land is another reason why machine picking is very difficult and hand picking is preferred. There are two main species of coffee grown today: Coffee Arabica. Coffee Robusta. Robusta grows at lower altitudes and produces a larger crop than Arabica; therefore, it is cheaper to produce Arabica is the most popular and generally considered to give superior flavour. Most Robusta is grown in Asia and Africa. About 75% of coffee grown is Arabica and 25% Robusta. Robusta is more often used as a blend with Arabica rather than a standalone coffee; used as a filler coffee in the production of instant or to add extra caffeine to an Arabica coffee for the European markets. Robusta is higher in caffeine than Arabica, but the flavour is not as palatable as the more popular Arabica bean. Coffee is produced in about 60 countries throughout the world but production is dominated by three countries producing approximately half the crop: Brazil, Vietnam and Colombia.
A. Hiking in Finland I've just come back from Finland. My friends from university invited me to join them on an eight-day hike. The walk is called the Bear Trail and it is in the Oulanka National Park in north-eastern Finland. It's a beautiful walk through forests and across rivers and lakes. We stayed at campsites and carried clothes, food and tents on our backs. I'm not the fittest person in the world but I was able to finish. I loved the incredibly clear air, the beautiful views and the sounds of nature. In my opinion, it is perfect for anyone who wants to start long distance walking as it is almost completely flat and well-signposted. Just try not to fill your backpack up with things which you won't need. B. Camino di Santiago It was the walk of a lifetime. Eight hundred kilometres from the south of France, over the Pyrenees mountains and across northern Spain to Santiago de Compostela. It all started so well. The path up to the Pyrenees was magical and it was good to meet other people doing the same walk. Everyone was enthusiastic about the walk ahead. But in Spain, the route often followed roads. It was noisy and monotonous, with unchanging views for hours and hours. More and more people joined the walk. They were generally friendly but it wasn't the experience I expected. I'd like to go back to the Pyrenees and hike there again but I'll stop there next time. C. The GR20, Corsica Corsica is a magnificent island with some wonderfully picturesque walks along the coast and inland. But for walkers, it is famous for the GR20, Europe's most difficult long distance walk. It goes from north to south and up and down from two hundred metres to over 2,200 metres above sea level. The frighteningly steep and rocky paths are beautiful but very demanding. Our guides will help you to complete the whole 180 km in fifteen days. Spanish Version Lesson 1 Social Studies The Medieval World Chapter 1 Medieval Europe The Great Fall Beginning in the 300s CE, there was great turmoil in the Western Roman Empire. After decades of invasions by Germanic tribes, the empire fell in 476 CE. At its height, the Roman Empire had reached across Europe and included northern Africa and parts of Asia. Life in the empire before it collapsed was either luxurious or simple, depending on where you were within the social order. If you were a member of the political class, you lived well. You would have enjoyed parties, lived in a large home, and had servants or enslaved persons tending to your every need. You would have attended civic gatherings in ornate government buildings. Most people, though, lived modest lives If you were at the bottom of the social structure, you would have lived in a simple home and worked hard every day. When you were not working, you might have enjoyed watching chariot races or gladiator fights. What all Romans had in common, however, was the patriarchy. This was a system in which the oldest man in a family made all the public decisions. The women were responsible for taking care of the home and the children, and they had few rights. This rigid social structure was the backbone of Roman society for centuries. Even though the fall of the empire meant that Roman government no longer existed, day-to-day life went on as before for many people. Those living far from Rome probably did not even hear about the invasions or the fall of Rome. As a result, the language and the structure of society remained largely the same—at least for some time. The ten centuries that followed the fall of the Western Roman Empire in Europe are called the Middle Ages, or the medieval period. Three important groups shaped life in medieval Europe. These were the Church, the aristocracy, and the commoners. The Church included bishops, monks, and priests, known as clergy. People were part of the aristocracy if their family were also members of this group. After that, the Church organized itself with a structure similar to the old Roman government, with each region having headquarters in a major city. The leader of the entire Church was the pope. The pope was, and still is, the leader of the Catholic religion throughout the world

In the sixteenth century, Spanish explorers introduced tomatoes to Spain, and the tomato’s popularity spread quickly through Europe. The French, Germans, and Italians absolutely loved them. But the British thought they were poisonous at first. In the nineteenth century, a British diplomat introduced tomatoes to the Middle East, and now Egypt is among the world’s top tomato producers. The fruit does not get ripe on the tree. People need to pick it from the tree before it develops its flavor and full maturity. Sailors used to call avocados “seaman’s butter,” because the fruit lasts for a long time, and it was good for sea voyages. Chocolate Chocolate (chocolatl in the Aztec language) was the treasured drink of the Aztecs. When the Spaniard Hernán Cortés arrived in Mexico in 1519, the Aztecs gave him chocolate as part of a royal welcome. It is said that the Aztec Emperor, Moctezuma, used to drink 50 cups of chocolate a day out of a gold cup. The Spanish introduced chocolate to Europe. When Europeans met American Indians in the late 15th century, the people of two continents exchanged many beneficial customs and goods. Europeans received New World crops such as potatoes and corn. American Indians acquired cloth and horses. However, besides the beneficial exchanges, Europeans and American Indians often traded deadly germs–bacteria and viruses–for which they had no immunity. Smallpox and Indians Image 1: Smallpox epidemics helped Europeans conquer the Aztec and Incan Empires of Mexico and South America. North American Indians quickly concluded that contact with Europeans often resulted in devastating diseases that caused widespread death. This drawing, made in the 1500s in Mexico, shows how the disease was passed from a European to an American Indian through simple contact. Many of the diseases that were common in Europe were entirely new to the peoples of North America. Diseases such as tuberculosis and measles could be fatal, but Europeans had developed resistance to the disease, so many people survived. However, when European diseases infected American Indians with no previous exposure, the people suffered terribly. The most devastating of these diseases was smallpox which is caused by a virus (Variola major). Smallpox, like many other diseases, had a latent period of about one week between the time the person was exposed to the disease and the time when signs of the disease became apparent. During this time, the sick person might begin a journey and carry the germs along with him. Anyone the person met would be exposed to smallpox. Anything the victim touched including clothing, bedding, or unwashed dishes carried living germs of smallpox. Cotton Mather Image 2: Cotton Mather was a Boston minister. When smallpox threatened Boston, he remembered reading about how the Turks inoculated people with dried material from smallpox blisters. The inoculation usually gave the person a mild case of the disease and future immunity. The procedure was highly controversial, but it helped save the lives of 274 people who were inoculated during the Boston smallpox epidemic of 1721. Symptoms of the disease began with fever, chills, and aches. The fever might raise a person’s temperature from the normal 98.6o to a dangerous 106o. After four days of misery, the victim entered the second stage when large pustules (fluid-filled bumps) appeared on the body. The rash made the person feel as if their skin were on fire. After suffering with the rash for nine days, the victim entered a new stage-if he or she had survived this long. The pustules opened and dried up. Each pustule formed a scab that turned into a scar that marked the person’s face for the rest of his or her life. Complications of smallpox for those who survived might include loss of vision or damage to the lungs, heart, or liver. Waterhouse Image 3: Dr. Benjamin Waterhouse of Harvard University brought Jenner’s smallpox preventative to the United States. It was called vaccination and used cowpox as the infective material. This much milder form of pox gave immunity to smallpox with fewer complications. Dr. Waterhouse encouraged President-elect Thomas Jefferson to promote vaccination. Jefferson responded, “Every friend of humanity must look with pleasure on this discovery, by which one evil more is withdrawn from the condition of man.” (T. Jefferson 12/25/1800 to Benjamin Waterhouse, December 25, 1800) Historians have found evidence of smallpox as far back as 1157 B.C. when the Egyptian pharaoh Ramses V apparently died of smallpox. From Egypt, where scientists believe smallpox began, the disease spread to Asia. Europeans began to experience periodic epidemics of smallpox in the14th century when Crusaders returning from the Middle East brought smallpox to Europe. People who survived the disease were immune and could not get smallpox again. This fact explains why epidemics struck periodically and the disease was not a constant threat to European societies. Smallpox Vaccination 1803 Image 4: Dr. Edward Jenner’s new smallpox vaccination (from cowpox) was widely accepted. This medical image was published by a Spanish physician to teach colonial doctors how to apply the vaccine to native Mexicans. The scratches were supposed to go through several stages of development as evidence that the vaccine had given the patient immunity. Vaccination was very effective in preventing smallpox epidemics among those who received the vaccine. In 1520, while Cortés was trying to conquer the Aztecs, smallpox broke out among the Spaniards and was transferred to the Aztecs. By 1527, the disease had migrated through Central America to Peru where it helped Pizarro conquer the Incas. (See Image 1.) In 1633, smallpox infected American Indians living near the English colony of Plymouth, Massachusetts. The disease traveled very quickly to tribes living far inland from the English colonies. In 1721, a smallpox epidemic threatened the English colonists of Boston. (See Image 2.) Cotton Mather, a Boston minister, wanted to inoculate people against the disease. He knew that Turkish healers took material from a dried smallpox scab and injected it into the body of a healthy person by scratching the surface of the skin. The patients developed a mild form of the disease from which they recovered. The procedure was highly controversial in Boston where about 280 Bostonians accepted inoculation. The epidemic infected more than half of the people living in Boston at the time. About 15% of those who got sick died of the disease. Among those who were inoculated, only six (2%) died of smallpox. The practice of inoculation spread to other English colonies, but not to the American Indian tribes living near the colonies. Late in the 18th century, British doctor Edward Jenner recognized that people who milked cows never came down with smallpox. They had already been infected with cowpox, a similar, but much milder disease that gave them immunity to smallpox. In 1796, Jenner inoculated a young man with cowpox virus he had collected from a milkmaid. The young man had a mild infection for less than 24 hours and recovered. Jenner’s efforts resulted in a widespread acceptance of vaccination (vaccine comes from Latin words meaning “taken from a cow”). By 1800, many Americans were receiving smallpox vaccinations. (See Image 3.) President Thomas Jefferson supported and encouraged the vaccination program in major American cities. (See Image 4.) By the middle of the 19th century, smallpox was under control, but broke out from time to time among unvaccinated people. Bismarck, Dakota Territory, experienced a small outbreak of smallpox in 1882. American Indians, however, were still subject to the disease in its most dangerous form.
