Heat cooking oil in a pot. Sauté the ginger, garlic, and onion until fragrant. Add the chicken pieces. Cook for 5–7 minutes until lightly browned. Pour in the water (or chicken broth). Let it boil, then lower the heat and simmer until the chicken is tender (about 30–40 minutes). Season with fish sauce, salt, and pepper. Add the green papaya or sayote and cook until the vegetable is tender. Finally, add the malunggay or chili leaves. Simmer for another 2–3 minutes. Serve hot with steamed rice.
